My entry for the event "Only greens" by Pari & Saraswathi
Paneer : 250 grams
Coriander Leaves : 1/2 Bunch
Mint Leaves : A handful (only leaves, no stems)
Green Chilli : 2
Tomato : 1
Ginger : 1 inch
Cumin Seeds : 1 tsp
Salt : To Taste (I have used sendha namak as I gen make this during fast)
Oil : 1 tbsp
Blend the coriander leaves, mint leaves, chilli, tomato and ginger into a puree.
Heat oil in a wok. Add the paneer, cut into cubes. Shallow fry it till paneer turns light brown. Drain the paneer and keep aside.
Now in the same oil, add cumin and let it splutter. Add the puree. Saute till all the water dries up and oil starts leaving the side. Add salt. Mix it well. Add the paneer. Cook for another 2-3 minutes. Add water as per desired consistency. Bring to 2-3 boils.
