I have received this recipe from my SIL ... Easy to make and great to taste ..
Ingredients :
Eggs : 8 Fully Boiled
Potatoes : 2 Boiled
Capsicum : 1 Sliced into rings
Onion : 2
Tomato : 1 Sliced into rings
Lemon Juice : 2 tsp
Salt : To Taste
Black Pepper : To Taste
Finely Chopped Coriander Leaves For Garnishing
Recipe :
Take 1 onion and finely chop it. Take a bowl. Mash the potatoes. Add the chopped onions. Mix salt, pepper, lemon juice and coriander leaves.
Cut the boiled eggs into half. Take out the yolk and mash it along with the potatoes.
Keep the boiled eggs in a large plate and stuff each half with the potato mix. Garnish it with Sliced Onions, Sliced Tomatoes and Sliced Capsicum and coriander.

That looks very healthy dear. Thanks for linking it to our event of bookmarked recipes. But, dear, unfortunately, I cannot accept it as it has eggs and per our rules, eggs are only allowed if it is in baking. Sorry about it dear :(
