My entry for the event "Only Greens" by Pari of Foodilicious and Saraswathi
Methi (Fenugreek Leaves) : 1 bunch
Spinach : 1 bunch
Paneer (Cottage Cheese) : 200 grams
Onion : 1 Big Chopped
Garlic : 4 Cloves Chopped
Ginger : 1 inch Chopped
Green Chilli : 3-4 Chopped
Full Fat Cream : 5 tbsp
Coriander Powder : 1 tbsp
Garam Masala : 1tsp
Salt : To Taste
Pluck the leaves from the methi. Chop the stems off from the spinach. Blanch the spinach and methi leaves. Cool it and make a coarse puree.
Heat oil in a pan. Add the onion. Saute till it turns brown. Now add the ginger and garlic. Saute for a minute or so more. Add the spinach methi puree. Stir well. Add the salt and corinader powder. Stir well. Lower flame and cook till all the water dries and the raw smell of leaves has gone.
Now add the cream and garam masala and mix well. Now add the grated paneer. Add water to the desired gravy consistency. Serve hot.
