Cashew Chicken

Ingredients :
Chicken : 500 grams (cut)
Cashew Nuts : 25 Whole
Poppy Seeds : 1 tbsp
Onion : 2 Medium
Bay Leaves : 3-4
Cloves : 6-7
Cinnamon : 2 inch
Nutmeg Powder : 1/4 tsp
Green Cardamom Seeds : 3-4
Cumin Seeds : 1 tsp
Cream : 2-3 tbsp
Salt : To Taste
Garam Masala : 1 tsp
Oil: 2 tbsp

Recipe :
Soak Cashews and poppy seeds in warm water for 15-20 minutes.

Grind the onions, cashews and poppy seeds in a paste.

Heat oil in a non-stick pan. Add the cumin, bay leaves, cloves, cinnamon, nutmeg and cardamom. Let them splutter. Now add the onion paste. Saute till the onions turns brown and the oil leaves the sides.

Lower the flame. Add the chicken pieces. Stir well. Cover and cook till the chicken pieces are cooked. Keep stirring in between, so that the chicken does not stick to bottom. Add little water if necessary. Once chicken is cooked, you can add water as per your requirement. I prefer mine with a thick gravy. give it 2-3 boils after adding water.

Remove from flame. Sprinkle garam masala and stir well. Garnish with cream.

Serve hot.
