Ajwain Mathri

This goes as my entry for My Event Cooking with Seeds - Ajwain started by Priya of Easy N Tasty Recipes.

Ingredients :
Wheat Flour : 2 Cups
Ajwain : 1 tbsp
Salt : To Taste
Oil : For deep Frying
Water : To Knead



Recipe :
Take a large bowl. Gather the flour, ajwain, salt and 2 tbsp of oil. Mix it well. Now add little water at a time and knead the flour into a dough. Make a stiff dough. Leave it aside for 10 minutes.

Now make small rounds from the dough, about the size of a marble. Take 1 round and mildly grease it. Roll it into a round shape mathri. Make small cuts on it with a knife. Keep aside. Repeat this process with all the rounds.



Heat oil in a wok. Enter a small piece of dough into the oil to check if its hot enough. If that dough rises up immediately then the oil is ready. If it doesn't, then let the oil heat up a bit more. If it rises dark brown (burnt), reduce the flame for some time till the oil is to required consistency. Then you can get it back to normal flame.

Now put the round mathri in the oil. Fry till its light brown. Turn it over. Fry again till light brown. Drain it on a strainer. Repeat the process for all the mathri.

Serve with pickle or chutney or ketchup or even any vegetable.
